Inspired by Condi and Monkeymom27:  Does anyone have any good meatless dinner recipes?  I'm specifically looking for something involving beans, rather than cheese dishes, since they are being talked up a lot these days as being really healthy.  But any ideas will do.  It's a good way to eat healthy and save money also.  I have one that we love at my house, but I have to get the recipe from home - can't remember the exact measurements.   idea

Pasta e fagioli is what comes to mind. Some people use a small amount of meat in the soup but you don't have to. I don't have a recipe at my finger tips. I'll have to see if I can find mine at home.

My 70th birthday party

The first thing that comes to my mind is beans and rice. That is what we had last night. I put some pinto beans soaking before I left for work yesterday and my son put them in the crock pot. He browned a pound of sausage and put in them but you could leave the sausage out. I cooked some rice when I got home and some cornbread. I had some homemade muffins that I served with canned peaches and cool whip. Pretty good supper. Beans are a healthy resource.

Here's a wonderful soup recipe! I suppose if you'd consider "chicken broth" as "meat" that you could use vegetable broth instead.

Baked potatoes w/meatless chili over them and a side salad.  Just make the chili w/beans like you normally would only omit the beef.  Use extra beans and a little less liquid.  Yummy.

I make an awesome enchilada casserole. I typically put chicken in it (add 2 chicken breasts, cooked and shredded and cut the cheese by half) , but you can just leave it out. I'll see if I can remember the proportions.

Enchilada Casserole

corn tortillas, 1-2 cans rotel tomatoes drained, 3 cups shredded cheddar or Mexican blend cheese, 2 cans green enchilada sauce, 1/2 red onion chopped.

Spray a 8x8 or 9x9 casserole dish with cooking spray. Line the bottom of the dish with corn tortillas, then layer 1/3 of the tomatoes, cheese, onion, and enchilada sauce. Top with more corn tortillas and compress. Repeat layers until the casserole dish is full. Top with corn tortillas and cheese. Bake 20-30 minutes or until casserole is bubbly in a 375 oven. Serve with sour cream and salsa verde. Serves ~ 9.
