There is a recipe going around that I haven't tried and I wonder if any of you are familiar with it or have tried it. You take a box of chocolate cake mix and add a diet coke and bake it. Of course you add whatever frosting you want. Or you can take a box of yellow or white cake mix and add a lemon lime diet drink.
Sounds too easy, doesn't it? I may try it. Some church school here had a bake sale and they reported that cake made like this was their most popular item.
I checked it on the internet and there it is. Have to see it myself to believe it.

Can't get much easier than that. I tried the white mix with a Sprite over the weekend. Very moist and good.
A friend of mine said her daughter made the chocolate mix with a Coke and said it was good too.

I tried to answer the questions about time and temp yesterday but I noticed it didn't post my answer. Yes, cook at 350 for about 35 minutes. Use the usual checks for doneness.
I also have a really good simple Peanut Butter Cookie recipe and I'll post that on another thread.

Ingredients 1 Package Pillsbury Moist Supreme Reduced Sugar Cake Mix (Classic Yellow, Devil's Food Cake, Classic White, or Lemon) 1 12 oz. can of diet soda Instructions Preheat oven and prepare pan for baking as directed on cake mix box. Slowly pour the can of soda into a mixing bowl. Empty the contents of cake mix into the bowl. It is important to introduce the mix into the soda and stir gently. While baking, the effervescent soda helps the cake to rise. Pouring the soda into the mix or stirring to forcefully will result in a flatter cake. Batter should be stirred just until moistened.
To make portioned servings, use batter to make 24 cupcakes being sure to use cup cake liners. Alternatively, cake pans may also be used. Bake according to directions on box.
try chocolate cake with Diet Cherry dr. pepper Lemon cake with diet sprite Yellow cake with strawberry diet soda

Thanks Southern Girl and Sandisuze for the recipe. I'm babysitting young grandchildren for a few days and we made this using a chocolate cake mix and Diet Coke. It really is delicious and so easy they could make it. Didn't have to worry about them getting the egg shells in the mix!

This is the one thing even my dad can make and he has burned numerous pans just boiling water. He uses chocolate cake mix and cherry coke. My kids love it too. My son goes to scout camp each summer and the big thing down in Osceola, MO is peach NeHi floats from Scott's Iconium Store. Anyway, we bring home several cases of peace NeHi soda and make it with white cake mix and peach soda.

ok ladies, I tried this and set the timer for 35 min, I ended up cooking it for 55 min, the knife came out clean so I took it out of the oven. I found it very crumbly and a little wet. I figure it was something I did, maybe our Cdn cans are bigger than the US (joking). Anyway would like to try it again, I used white cake and Sprite. Maybe I will try something different next time. I haven't tried this yet, but I'm wondering. Are all boxes of cake mixes the same as far as weight? I've noticed a lot of products have slightly reduced their volume, just enough so no one really notices, but kept the price the same. I guess it's their way of avoiding raising prices. One example is the coffee I buy - it used to be a 13-ounce bag, now it's 11. Maybe the cake mix you used is a slightly smaller amount than some of the other brands?? Just a thought.

If you don't have an oven thermometer, I'd suggest getting one and checking that your oven is really the temp you expect it to be. I've seen ovens off by 25 deg F before, which can make quite a difference. The other possibility is that you used a smaller pan, resulting in a deeper layer of batter, which cooked differently (but, at 55 min, I'd think that wouldn't matter).

I still haven't tried this yet. I was going to over the long weekend, but things got out of control!  They talked about this at the WW meeting last week, and I got the impression they come out more as brownies than cake and that you don't frost it. She said they are 2 points each (can't remember how many pieces you cut to make them each 2 points), so I'm guessing that doesn't include frosting.
