I imagine this has really gotten around but I'll post here just in case any of you don't have it.

This would be great for kids to make I think. 

1 cup peanut butter
1 cup sugar (or Splenda)
1 egg
1 tsp. vanilla
Hershey's kisses for top (optional)

Beat together peanut butter, sugar and egg.  Roll into balls.  Bake at 350F for 8-10 minutes.  As soon as they come out of the oven, press a Kiss into the top of each one.

Those sound delicious and super easy.  And using Splenda makes them better for diabetics!
Thanks for posting this recipe.  I had never seen it before!

A pastor's wife who used to be a member here has a recipe blog and she has some great recipes on there.  This is one of hers.  She has four little kids, ages 5 down to less than a year old.  She also has a home business in additon to all that.  I don't know how she does it!

That's right.  No flour.  Isn't that amazing. I've made these several times and I love them.  (Too much.) Have to give them away to keep from eating them.  Rich!!  I think I may make a batch of these tonight to give to my bulletin volunteer tomorrow.

I have this recipe and use it whenever I have a craving for cookies. I can't have anything with gluten and these taste really good. They are a little more fragile than regular peanutbutter cookies though.

That's true.  Best when really fresh too.  My dil's nephew has to have gluten free so I'm always noticing recipes for that type of thing as well as for diabetics.

I am GF too and cookies you buy from the store are Eww  sick  in my opinion smile
I am going to have to try these!

The GF cake mixes are ok though.. not great but ok. Thats why I love to go to Walt Disney world because I can eat GF there and it's GOOD!
I miss Pizza tasting like real pizza though..

I really miss crackers too! Some of the GF ones are really awful. Some of the bread mixes and brownie mixes are pretty good though.

I tried these last week for a Mother's Day dinner at Scouts and now I'm addicted. And they make just the right number (12-16 cookies using a melon baller scoop). And my kids are addicted too. Even my son, who is 15 and starting to take an interest in cooking was up in the middle of the night Friday night making them because he had a craving for something sweet and couldn't sleep and promptly ate the entire batch! These are now my go-to cookies - so simple and and quick (15 minutes from start to finish!)

Yes, I agree.  This is such a handy recipe.  I like the amount it makes too and they are so addictive.  I don't want too many in the house at once.
