Since tomato season is upon us anyone care to share their favorite tomato recipes?  I'll go first!

"Taste Like Summer"
Slice fresh tomato (I usually use Roma) little salt & pepper, drizzle with extra virgin olive oil
slice of "fresh mozzarella" on top of tomato (a little pricey but O so yummy) (I purchase from super walmart)
fresh leaf of basil on top and a drop of EVOO 
Pop it in your mouth and you'll see "It Tastes Like Summer"   yes

I love to make a tray of these for picnics/parties and it's really pretty healthy!

I have Italian somewhere in my bloodstream but not sure where it came from  Contemplating~ I could sit and smell a bouquet of fresh basil all day  colored hearts

Ok, I don't know that I have measurements for this, but I will tell you what my mom used to do and it's really good.

Take a couple of tomatoes and slice them horizontally. Set aside.

Dice some onion and celery. If you use 2 tomatoes, you probably want 1/3 cup each onion and celery. Saute the onion and celery in a little butter or margarine until tender crisp.

Spray a small baking dish (ceramic or glass) with non-stick spray. Put in a layer of tomatoes, top with a layer of onion/celery. Sprinkle on some grated extra sharp cheddar cheese and pepper (and salt if desired, but I don't use salt). Repeat layers. Top with a few crushed buttery snack cracker crumbs (personally, I like Ritz). Bake in a 350 oven about 10-15 minutes until the tomato is heated through and the cheese is melted. Serve immediately.

I don't have the exact recipe but this is pretty close

Take 4 or 6 boneless skinless chicken breasts (cutlets) sprinkle with garlic powder and brown in a pan with olive oil. Transfer to 9x13 pyrex dish. Top with a mixture of ricotta cheese, parsley, 1 egg, dash of nutmeg and pepper. Spread across the chicken and then top with fresh baby spinach leaves. Top that with chopped fresh tomatoes (about 3 or 4 depending on the size and you can use any kind of tomatoes you have) and a bit (just a bit) of chopped red onion. Sprinkle the top with grated mozzarella cheese, cover with tin foil and bake for about 30 minutes at 350.

Cooking time depends on how thick the cutlets are, how close together they are in the pan, etc.

Donna, if you feel like being official, that is a called a Caprese Salad and I love, love, love it!

I've sauteed fresh tomatoes (doesn't matter what kind) with squash, zuchinni or yellow, chopped onion, a little chopped garlic, fresh basil, salt and pepper in a little olive oil. Very good side dish.

Well gosh Diney, I didn't know it's  called "caprese salad" thanks for educating me!!!!   Had some over the weekend, along with corn on the cob ~ ooh so good!!   *coloredhearts*summer veggies   chef

My husbands grandmother would make a summer salad w/tomatoes, onions and cucumbers.  It is a hungarian dish I think, or at least a variation of one.

Take a couple of tomatoes and cut them in half.  Then quarter the halves.
Place in a bowl with one sliced vidalia onion and a sliced cucumber (skin removed)

The dressing was cider vinegar, sugar, mayo, salt and pepper.  I don't measure, I just taste until it is right. 
You can use sour cream or Miracle whip instead of mayo too. 

It is a creamy refreshing treat, IMO.

I tried fresh mozzarella, and I don't like it. I wonder, however, if you could puree some basil and tomato together and then put it in a saucepan and melt in some mozzarella and eat it hot, like a fondue? That might not be so bad. Or; hollow out a ball of fresh mozzarella (like a cup) and then pour the piping hot tomato/basil mixture in and use it for a dip?

I think instead of hollowing out the cheese, I'd hollow out a round loaf of really crusty bread and use the left over chunks to dip into it, like you do w/spinach dip & pumpernickel bread.

Melissa, son and I are going to make pasta sauce tonight to try and use up the table full of Roma tomatoes before they spoil. I have already canned 32 jars of plain tomatoes and don't want the rest of the tomatoes to ruin. We made it last year and it very good. You put the recipe on the forum maybe it was your sister's recipe, not sure. Last  year, we made about 10 or 12 jars and it went in a hurry. So we thought we would try it again. Thanks for the good recipe.
