I am involved in making meals for other people here at church.  But also think a lot about making a meal for another family just because.  Anyone have any great recipes that are easy to bring somewhere and yummy too?

My 70th birthday party

One that we like and my son made yesterday in the crock pot.
2 cans great northern beans
1 onion chopped
Bell pepper chopped
1 can diced tomatoes
1 pkg mild italian sausage (take out of casings)
a little Italian seasoning
Garlic or garlic powder
Saute sausage, onion and bell pepper. Add to crock pot with beans and seasonings and cook all day.
Really good with a pan of cornbread or cornbread muffins

Tator Tot Hotdish is always good and easy...Here is mine for a 9X13 pan

2 lbs fried hamburger (with onion, green pepper, celery and seasoning to taste)
1 large can of Cream of Mushroom soup
1 bag of Frozen Tator Tots
Shredded Cheddar cheese

Put the hamburger on the bottom, pour the soup (with enough water to make it a little easier to pour) over the top. Place the Tator Tots on top and pour some more soup over if you like. Bake for 30-35 minutes at 350 degrees, sprinkle cheese on top and broil till bubbly.

If you are freezing it for a family, then put it all together with the cheese in a ziplock baggy for them to add just before serving. Do not cook prior to freezing and increase cooking time to about an hour before you add the cheese.

When cooking for another family I like to bring it in disposable dishes if at all possible so they don't have to wash dishes and worry about returning them.  I occasionally even put in disposable plates, silverware, napkins, cups - depending on the case.  A new mother or someone really sick appreciates this.
I made a casserole for our dinner last week and my husband thought it was very good, and I thought this would be perfect for a give-away meal!

Turkey Rice Casserole
in 9x13 pan layer 3 cups cooked rice
(I omitted can of mushrooms)
10 oz. box frozen broccoli cuts - pre-cooked
4 cups cut-up turkey or chicken
slices American cheese (I used shredded Cheddar)
Mix 1 can cream of celery and 1/2 cup mayonnaise (not low-fat) - spread on top
top with French fried onions

Bake 350 degrees for 25 minutes

(I cut the recipe in 1/2 and cooked in 8x8" pan for the two of us - used the whole can of soup anyway.)

I do one very similar to this that my husband loves.  He's a tater tot nut!  Mine uses ONE pound of beef, cooked with onion, and a can of cream of celery soup.  The regular size...10oz maybe?  The rest of the directions are just the same, except I don't water down the soup, and I use an 8x8 pan.

Tatertot casserole reminds me of the Duggars, I think this is the dad's favourite.

I can't imagine trying to feed a family of 21!!!  I guess you'd have to go with casseroles.  They go a long way!

Well I made the sausage and bean recipe and my family loved it, my husband said it was excellent.  I couldn't try it because of my diet, but it looked good.  Definitely will add it to the list, maybe just not for cooking it for a mom that just had a baby.  The spice in the sausage may not be good for a nursing mom.  Nice thing about this recipe is I can make more and feed my family the same thing.

I was recently off work for two month due to knee surgery.  For about 10 days my church did meal deliveries and it was so appreciated.  One of my favorite recipes was a simple dish of sliced turkey wrapped dressing and then turkey gravy poured over it.  So simple, yet so tasty.  Imagine my surprise when I found out that it was my office co-worker that made it.
