I haven't tired any new ones lately. Would love to, though.

So many of my soup recipes are just throwing what I've got into a pot. It tends to change every time. My favorite, though, is chili. I make that quite often. I use beef stew meat in mine, browned, add a beer, tomato sauce, beans and the seasonings, and let that simmer. Yum, yum.

I make a good chicken noodle soup. Boil the chicken (dark meat is best), let cool and debone and set aside. Add carrots (chopped) and onion and celery (Chopped) and let cook till tender. Add 1 can of cream of chicken soup and stir well and add noodles. Not too many noodles or you'll have chicken and noodles instead of soup. Amounts are up to you, according to how much soup you are making.

One of our favorites is hamburger soup. 1 lb HB meat sauteed with onion and garlic. Drain and put meat in soup pot. Add 1 bag of frozen mixed vegetables or a can of mixed veggies, a can of diced or crushed tomatoes and a small can of tomato sauce and a couple cups water. Season to taste. I like to put a little chile powder, salt, pepper, garlic powder and a little Mrs. Dash. Of course, this must be served with hot cornbread. this is a good way to use up left over veggies and gravy from a roast.

Nina, I make veggie beef soup the same way you do and it comes out really good every time.

I have a cheater potato soup recipe that we really like.

2 cans Campbell's potato soup
chopped onion
butter
milk - 2 cans of milk
water - 2 cans of water (My ratio is normally 3 cans of milk, 1 can of water to make it creamier)
Uncle Ben's Long Grain & Wild rice (either the microwave pouch or boxed, if boxed, prepare rice with or without seasoning packet - I cook rice without the seasoning)
shredded Cheddar cheese
bacon pieces (either do your own or you can buy real bacon pieces in the salad dressing section)

Cook onions in butter in soup pot until clear, add canned soup (I sometimes boil extra potatoes and add), add milk & water. Add cooked rice, cheese, and bacon.

I don't normally measure anything so I added the milk & water amounts according to the recipe. I normally eyeball everything I add - like the cheese & bacon. I do add all the rice to the soup though.

This is great with cornbread.

Homemade Cream of Tomato Soup

Tomatoes
Onions to taste
Peppers to taste
Beef Bouillon to taste
Heavy Whipping Cream
Olive Oil

Remove the tomato skins and chop them up into the size you would like (or they may be pureed
Fry the onions and peppers in the olive oil in a stock pot
Add the tomatoes and bouillon fry until the juice is decreased
Add enough cream to what you prefer

Sorry about no specific amounts as I never use measuring cups.  blush :p

These make me wish it would turn cold enough here to want a big old bowl of soup.  It's been kind of warm here lately for soup to taste really good.  I love it when it's cold out tho.

I have a quick and easy tomato soup. 2 cans cream of tomato soup, add 1 can milk or evaporated milk, a couple pats of butter or olive oil and shake in a little italian seasoning. Serve with grilled cheese sandwiches.

Progresso Light Soup was on sale cheap last week, so I stocked up...I'm not a good soup maker...not sure why. Your recipes look good though, thanks!  Thank You

Oh--I have the most delicious recipe for Chicken Tortilla Soup that a friend gave me and I just tried recently.  I'll try to remember to post it soon.  yes

Barb, please post that recipe. I've been wanting to try Chicken Tortilla soup for a long time.

We had homemade french onion soup last night and will have leftovers tonight. Yum!! I love that stuff!

Here's our recipe:

1 large red onion, sliced
2 cartons beef broth
1 cup or so of mushrooms
1 cup red wine - optional
butter
croutons
swiss cheese slices
salt & pepper

Saute onions and mushrooms in butter til almost done. Pour in red wine and let simmer 5 minutes or so til it reduces. Add in beef broth and simmer til hot. We usually let it simmer a couple of hours. Add salt & pepper to taste.

Pour soup in bowl, add croutons and top with swiss cheese. MMMM!

OK, here's the recipe for Chicken Tortilla Soup--super easy and oh so good!

2 c. cooked, diced chicken breasts
1 16 oz. jar salsa
1 32 oz. can chicken broth
1 15 oz. can black beans, drained and rinsed
2 16 oz. cans petite diced tomatoes (not drained)
Chopped cilantro (1/4 c. fresh or 2 tsp. dried)
1 tsp. cumin
2 tsp. minced garlic
Tortilla chips
Shredded Cheddar or cheddar jack cheese
Sour Cream

Put all ingredients into a crockpot, except the chips, cheese and sour cream.  Cook on low 4-5 hours.  Or cook on stovetop, simmering at least 20 minutes.  Top with tortilla chips, sour cream and shredded cheese. I will tell you that I am on a low sodium diet and I used all low or no sodium ingredients (salsa, broth, beans, tomatoes) and it was still delicious!

We're making Cowboy Soup here today. Here's the recipe

1 1/2 lb hamburger meat, browned
3 cans minestrone soup
1 can Ro-tel tomatoes, diced
1 can Ranch style beans
1 med onion, chopped
Salt and pepper to taste
Garlic to taste
Brown hamburger meat and onion together. Add the remaining ingredients. Let simmer for 30 to 40 minutes. Can be done in slow cooker, but meat needs to be browned first. Gooooood with cornbread or fritoes and cheese.

That sounds good too.  It's supposed to turn cold this weekend so maybe I'll make my first pot of soup for the season.  Now which one should I make? Contemplating

Have you ever put perogies in your chicken n dumplings instead of making the dumplings?  I did that the other day and it was super yummy. I didn't thicken the soup though and I think next time I will make it more of a cream soup.  It was more like chicken noodle soup w/perogies instead of noodles.  But it was delicious and everyone liked it, even my husband who is not a soup fan.
