Okay...I made this soup last night and it was SO good, I thought it deserved it's own thread!

I changed it just slightly because I like a thicker soup. I added a bit of corn starch and water to thicken it, then I added a bit of half and half. I would have used heavy whipping cream but I didn't have any. It it SOOO delicious! Perfectly seasoned. Did not need any salt. I think next time I might use more chicken.
2 c. cooked, diced chicken breasts
1 16 oz. jar salsa
1 32 oz. can chicken broth
1 15 oz. can black beans, drained and rinsed
2 16 oz. cans petite diced tomatoes (not drained)
Chopped cilantro (1/4 c. fresh or 2 tsp. dried)
1 tsp. cumin
2 tsp. minced garlic
Tortilla chips
Shredded Cheddar or cheddar jack cheese
Sour Cream
