Tuesday night I got my electric skillet out. I made meatloaf:

2 lbs hamburger
20 crackers crushed
1/2 tsp. salt
1/8 tsp. pepper
2 eggs
2 Tbl. dried minced onions
I add a couple of sprinkles of liquid smoke

Mix all the ingredients together & mold it like a loaf & put in skillet at 325 deg. F. for 5 minutes to brown. Drop temp to 250 deg. F. Get 4-6 potatoes scrub & quarter, place on pan. You can use either frozen lima beans or green beans & place on the other side of the pan. Cook covered for 35 min.

You have a whole meal with meat, carbs & veggies. I will say, we got some hamburger on special that was 75% lean. It turned out too greasy. I would go with 80% lean. You have enough fat from the meat to keep the potatoes & beans from sticking.

That DOES sound good, Mary!  And the name reminded me of a recipe I have a home called Skillet Spaghetti.  You just use a large frying pan, not an electric one.  It's really easy, too....I'll have to remember to bring that in to share.
