1 lb spicy Italian sausage - crumbled (I take it out of the casing)
1/2 lb smoked bacon - chopped
1 qt water
(2) 14.5 oz cans of chicken broth
2 large russet potatoes - sliced (sometimes I use a different kind of potato and do not peel)
2 garlic cloves - crushed
1 med. onion - chopped
2 cups chopped kale OR swiss chard (don't be tempted to leave it out, I use kale and even my husband loves it)
1 cup heavy whipping cream
salt and pepper - to taste
In a skillet ever medium high heat, brown sausage, breaking into small pieces as you fry it, set aside.
In a skillet over medium high heat, brown bacon; drain, set aside.
Place water, broth, potatoes, garlic and onion in a pot; simmer over medium heat until potatoes are tender.
Add sausage and bacon to pot; simmer for 10 minutes.
Add kale and cream to pot; season with salt and pepper; heat through.

Has any one had it from Olive Garden? My husband used to wake up on Mondays (when I used to have Mondays off) and ask me if I had any errands to do in Michigan that day. I will always say yes if he is willing because I love to go over so much, he then would reply, mmm Zuppa Soup.  It is so cheap, I think around $6 for all you can eat soup, salad and breadsticks.

I haven't had it from Olive Garden, but did make something similar thanks to Alton Brown. I used kielbasa instead and it was awesome. Yes, you have to have kale. It really is good.

I use a very similar recipe. It is my middle son's FAVORITE soup. He's requested it on his birthday multiple times.
