My 70th birthday party

Gingerbread

Here's a gingerbread recipe that I got from a lady I used to work with. She would go home for lunch and make this and bring it back to work with her to share. It's a good recipe. My friend died several years ago with MS.
Bernadette's gingerbread

1/2 c oleo or shortning
1/2 c brown sugar
1/2 c white sugar
2 eggs
1 c brown syrup or molasses (I use molasses)

2 1/2 c flour
1-1/2 tsp soda
1-1/2 tsp baking powder
1 tsp cinnamon
1/2 tsp cloves
1/2 tsp nutmeg
1 tsp ginger
3/4 c boiling water or hot coffee. Put in last and stir. Pour into a greased and floured bread pan or 9 x 13 and bake at 350* until done. Don't overcook. Serve with Cool Whip. Delish! Hope you enjoy.

Oh my gosh, this looks yummy. Makes me miss the cooler days of fall/winter and baking. Sorry about your friend, Nina. How nice to have the recipe from her... a nice remembrance. smile
