I wish I would have had this recipe when we went to my son's home for Thanksgiving...

10-12 lb. turkey
2 chicken bouillon cubes
2 c. water

Place turkey in ungreased roasting pan; cover loosely with aluminum foil. Roast at 350 deg. for 2 1/2-3 hours. Turkey is done when meat thermometer in breast reads 165 deg & thigh is 170 deg. Drain off pan drippings, reserving for gravy if desired. Allow turkey to cool about 30 min. Slice turkey & place in a casserole dish, keeping dark & light meat separate. Add salt to taste as slices are layered. Dissolve bouillon cubes in boiling water; pour over turkey. Cover with aluminum foil & refrigerate 1-2 days. Reheat, covered at 350 deg. for 30-40 minutes, until warmed through.

I had a neighbor (in Iowa) years ago who did this same thing. I remember Thanksgiving at her house and how delicious the turkey was. I think I might try this recipe this year. Thanks for sharing. I LOVE turkey and the smell of it baking!  Yum...I can almost smell it baking already!  chef

My parents do this, but also my dad takes the skin off in one piece and will layer it over the turkey for extra protection against the top being dried out. It makes me think of Silence of the Lambs and grosses me out.

Diney, you made me laugh out loud. I just wasn't expecting that at all.

Mary, thanks for posting this. There are SO many things that can be done ahead prepping for the big day, but I haven't heard/thought about the turkey!
