I did this Saturday - it was delicious.

2.5-3 lb. boneless pork loin roast
1 large garlic clove, slivered
5-6 potatoes, cubed
1 large onion, sliced
3/4 c. broth, tomato juice or water
1.5 Tbsp. soy sauce
1 Tbsp. cornstarch
1 Tbsp. cold water

1. Make slits in roast & insert slivers of garlic. Put under broiler to brown. (I skipped this cause I was in a hurry!)
2. Put potatoes in slow cooker. Ad half of onions. Place roast on onions & potatoes. Cover with remaining onions.
3. Combine broth & soy sauce. Pour over roast.
4. Cover. Cook on low setting for 8 hours. Remove roast & vegetables from liquid.
5. Combine cornstarch & water. Add to liquid in slow cooker. Turn to high until thickened. Serve over sliced meat & veggies.

Varaiation:
Use sweet potatoes instead of white potatoes.

That is right up my alley.  Love pork roasts. 
I've been cooking with a pressure cooker alot lately and I absolutely love it.  All day flavor in 20-30 minutes.  smile

I'm definitely going to try this.  It sounds delicious and also probably low in WW points if I don't eat too many of the potatoes.  I love the crock pot this time of year.  I made WW lasagne in it on Sunday and it was delicious.  I'll put the recipe on here if I remember to do that when I get home.
