I canned 10 quarts of tomato juice yesterday. We're looking forward to chili when the weather gets colder!
Does anyone oven can? We had an old Kerr cookbook that told how and we gave it a try several years back. Two of the jars EXPLODED and blew the door of the oven open. We had glass and green beans everywhere! What a mess! Never tried that one again.

The classes/books these days say not to oven can because it isn't safe in the food sense.

My neighbor did cakes in jars in the oven. She said all you have to do is follow the recipe (she did box cake) and pour the batter into the jars 3/4 of the way. You bake until it's done, then put the lid on. It will seal itself as it cools. They stay good for up to a year. They are SO yummy.

I'm toying with the idea of buying tomatoes, onions, peppers (hot and sweet) and garlic and canning spaghetti sauce over the Labor Day holiday, but I'm not sure if I want to work all weekend.

I just heard about oven canning the other day, when I went visiting with a friend. The lady has done it for over 40 years without a problem. She said she places a large cake pan about 1/2 full of water and places the jars in the water and turns her oven to 200 degrees and leaves the jars in the oven for about 1 hours. She said it keeps down the moisture in your house as well as you can can more jars at once than you can in a pressure cooker or a canner.
We also talked about old time canning and my mom has a water bath canner that can hold upto 20 jars at one time. She even uses an old gas stove that she has down in the basement that has burners that are just wide enough to place the canner on so both sides of the canner heat up.

 onions and garlic are 2 staples at my house! EXACTLY! Our AP can't eat either, and fixing meals for her and her hubby is a challenge for me. This weekend I'm putting together a bunch of freezer meals for our 3 couples who are expecting (AP included) and have been thumbing through my cookbooks bigtime for things that will still taste good (in my opinion) without onions and garlic.

I always buy from the store, but since living here and having a garden, I have lots of nice tomatoes. Would you mind sharing?
