Well, it won't work for tonight, but here's a real easy crock pot dinner my mom told me about.

Place 2-4 boneless porkchops and 1-2 cans cream of chicken or celery soup into the crock-pot.  Turn on high for 6-8 hours.
So simple!  It's ready when you get home!  The meat is SOOOO tender.  I just shred it a bit and put it over rice or noddles.  Add a veggie/salad and some cottage cheese!  YUM!

My husband prefers his meats to be extremely WELL DONE.  So, for him, before putting the chops into the crock pot, I brown them quickly in a skillet.  Just to give them some color.  He likes it better that way.

I like Brenda's ideas. Those Cream Of ______ soups are great for crockpotting. I think they work best with pork, so I second her idea.

I'm still trying to figure out my menu. We've got sporting events tonight and practice, so dinner might be one sandwiches shortly after school and cereal before bed.

just a ham and a can of beer?  that sounds interesting.  I love ham....hubby doesn't so much.  I'll have to try that recipe!

I have no clue! The guys are supposed to head out to the Rangers' game tonight, so it will be me and my mom, and today is her birthday. Probably a good salad for dinner, since I don't feel like cooking and noone has bothered to clean up the kitchen.  Angry

I wasn't sure how it was going to be either, Brenda, but it was pretty good. I had a ham shank and I trimmed off all the excess fat/skin before I put it in the crock pot. It just fit in my 4 qt. crock pot. I poured a 10 oz. can of Budweiser on it (we had gotten the beer because my husband uses it in his chili - will have to get some fish to make some beer batter fish to use it up). Cooked it all day on low. I'm not a big ham fanatic either. Will use what's left to make my hubby some ham and stringbeans with potatoes.

This is making me hungry for lunch already . . . I'm making eggplant parmesan with angel hair pasta. The eggplants are so great at this time of the year in my area. We have wonderful farmer's markets that sell local produce. My husband's favorite dish is eggplant parmesan.

Mmmmmm.....eggplant parmesean.  That sounds yummy!  I make chicken parm occasionally.  Love that too!

I love ham.  Especially in a big pot of ham and beans.  I make at least one pot of ham and beans a season.  Split it up into quart bags and freeze it.  It keeps me and hubby warm all winter long.  Although he doesn't like ham, he likes the ham and beans.  So, the ever loving wife that I am, I pick out the big pieces of ham from his bowl for him.   cool

Yeungling is very good.  My brother-in-law turned me on to that.  SOOOO good with a big ol' pile of nice steamed crabs!

My husband drinks beer on occasion (I think it taste like carbonated pee.). He prefers Coors Light, but the Bud was cheaper and he can choke it down. Most of it will be used for cooking.

Tonight's dinner (Friday) is going to be taco salad:

1 lb. lean ground beef
1 pkg. taco seasoning

Brown beef, drain, add taco seasoning and water as directed on taco seasoning package as if making for tacos. (I use Old El Paso's Reduced Sodium Taco Seasoning).

1 head lettuce
1 can (15 oz? - soup can size) kidney beans, rinsed and drained
1 package (2 cups) shredded cheddar cheese
2 medium tomatoes, diced
1 bag Nacho Cheese Doritos, crushed
Italian Dressing

Tear lettuce into large bowl. Add kidney beans, tomatoes, cheese, warm taco meat, and Doritos. Add desired amount of Italian dressing and toss well to coat. Serve immediately.
