Karen,

I would cut it into very thin strips or very small pieces and use it to make beef stroganoff or throw it in a soup. My husband likes beef and noodles which is basically egg noodles cooked in beef broth with pieces of beef and onion, pepper (and salt if desired, but we don't salt much at our house--and chances are the beef broth, especially if it's canned, is pretty salty anyway).

One of my favs, although we dont have very often, is a beef dish where you make a homemade bbq sauce and then add beef to it and let it cook with the lid off for it to condense for 2 hours.  The beef is falling apart and it is a sweet and spicy sauce that you serve over egg noodles or rice.  Yum.  It has worchestershire sauce, ketchup, sugar (which is why we dont have it often), onion and coffee.

Mmm. Hungry, hungry!!!

Good ideas. Yeah, any way of letting that meat simmer in some sauce is going to tenderize it a bit. Sounds like it would be good in chili, too. I made that yesterday and had it simmering for a few hours. It was yummy.

Thanks for the ideas - I guess I'll try chopping ity up and simmering it in something - it's worth a try. Maybe we've invented a new recipe "Rubber Roast Rebound"!!   yes

Where in PA?

I was in Exton/Lionville. Near Paoli/West Chester. Buried my mom's ashes. Had a nice church service in a Lutheran Church. Got to see my aunts/uncles/cousins who still live there. Saw my nephew from CA who flew in and my sisters who live far from me and I haven't seen since mom died 3 months ago.

Always good to be in PA.

Karen, it is a little late now but throw it in a crock pot and let it cook for several hours on high. It will be falling apart.

Mom used to do that all the time, only we would make sandwiches out of it.  I bet it would be good making a knife and fork sandwich out of it like Bob Evans Restaurants do.  Yummy!

We had leftovers. I'm trying to eat up some of our "stock" right now. Need to get rid of some of our pantry, so we can restock fresh.

We had one of those Wanchi Ferry Asian dinner kits last night.  It was delicious!  I was skeptical, b/c I've never really liked dinner kits and only use them for quick and easy solutions, but this was really really good!  It was $3.50 at Walmart and I hesitated, but it was worth the money.  No leftovers.  The kids didn't even try it though, b/c it was spicy.  My husband and I ate the whole thing!   I'd say it would feed 2-3 people.  My kids had leftover roast beef, gravy & mashed potatoes from the night before so they ate hearty too.
