Does anyone have a good recipe for pumpkin bars that doesn't use cream cheese?  My daughter loves pumpkin and I'd like to make some pumpkin bars, but she isn't a fan of cream cheese.  All the recipes I see either have cream cheese in them or use a cream cheese frosting.  It seems like I've had some with a crumble topping but can't find a recipe like that.

Never heard of pumpkin bars, sound good.  Could you just take the non cream cheese recipe you saw and add a crumble crust similar to a date square?

Barb, go to kraftfoods.com or taste of home.com. I think you will find some good recipes on there. I saw a good one on Kraftfoods.com called pumpkin pie bars. Looks really good. No cream cheese.

I bet you could make a buttercream frosting instead of the cream cheese frosting/filling.  Or make the bar/cake part and layer it w/french vanilla pudding & cool whip like you would an eclair cake.
