Whether you need a lot of muffins for coffee hour at church or just want something quick and healthy for breakfast, these muffins are great and freeze well.  yes

HEART HEALTHY MUFFINS

1 box (20 oz) raisin bran (I use the store brand--cheaper!)
5 cups skim milk
1 cup oil
egg substitute equivalent to 4 eggs
2 cups brown sugar
1 1/2 cups white sugar
4 teaspoons baking soda
5 cups flour
1 teaspoon salt

Mix raisin bran and wet ingredients together (you will need a BIG mixing bowl). Add dry ingredients and mix with a large spoon until blended together. DO NOT USE ELECTRIC MIXER!!! Fill greased muffin pan 2/3 full. Bake at 400 degrees for 20 minutes (large muffins) or 12 minutes (mini muffins). Makes about 6 dozen large or 12 dozen mini's. Mixture keeps in refrigerator up to 6 weeks.

Just updating... I made these. Great recipe. As I made them, I recalled a similar recipe from a few years back and I have to say, this one is better. I made a few changes, like using plain bran flakes and adding my own raisins. I'm always looking to lower sugar, so I only added about a cup of sugar total (the cereal has some sugar in it, too - seems like all the raisin brans do).

Anyway - We've been snacking on them for a few days now. I froze some, too, for later. Thumbs up, thanks monkeymom27! smile

My 70th birthday party

Wow, Melissa, that is so funny. Just yesterday, the Music Minister's wife was in the small kitchen next to my office making these same muffins. She said she was making them for a couple in this church whose 14 year old grandson took his own life last week. She showed me the recipe that her mom had written down years ago. It had a different name (don't remember what) but I'm sure it was the same recipe. How funny is that? I would love to try these but I am quite sure that we would make a new batch every other day and I need to lose the extra weight I put on while off my thyroid meds for 6 months.
