These are so good I can't stand it! 

1lb chicken breasts (I used boneless/skinless)
1 medium yellow onion
2 cloves garlic
1 green and 1 red bell pepper (or 2 of the same color  :p )
2 tablespoons lime juice
1/2 tsp each oregano, ground cumin, chili powder and ground black pepper.

Cut chicken into 1/2 wide strips.  Peel onion and cut into 1/4 inch rings.  Put the onion in the slow cooker.  Peel garlic and mince well.  Remove stems and seeds from bell peppers and cut into 1/4 inch wide strips.

Combine garlic, lime juice, and spices and add chicken.  Toss well to coat.  Pour chicken and juice mixture over the onion in the crock pot.

Cover and clook on low for 6-8 hours.  About 30 minutes before serving, stir in peppers.  Cover and continue cooking on low for 30 minutes.

Spoon into warm flour tortillas and top with your favorite toppings.  I like sour cream and sharp cheddar cheese!

I think I will make these when the kids are home for Christmas...quick, easy, sound super yummy, and not too bad for the diet with "light" tortillas and sour cream. Pastor told me about flatout bread. We use them instead of flour tortillas...they are high in fiber and low in fat and are very tasty when made into burritos. Thanks for sharing!!

Just to let ya know I made these last Friday!
I put mine over rice as I don't like corn tortillas and can't eat flour ones.
I added a can of diced tomatoes the next day and added a bit of leftover chicken broth, added the left over rice and we had stoup
I made corn muffins to go with them.
Very, very yummy

(stoup is what Rachel Ray calls stew & soup - not thick enough for stew and not too runny like soup.)

my 16 yo ate 4 bowlfuls  Yum

Thanks for this recipe, Brenda.  I can't wait to try it!  I need to eat low sodium and was excited to see that this recipe doesn't use any added salt!  The tortillas have too much sodium, but I will try it over rice as suggested.   Sour cream is lo-so, and I can just use a very small sprinkling of cheddar cheese.   Thank You
