Post by: Nina on February 07, 2018, 05:04:09 PM
Cowboy Soup  *yes*

1 pound ground meat, browned with 1 minced onion
1 can Rotel tomatoes
1 can stewed tomatoes
1 can creamed corn
1 can whole corn
1 can Veg-All mixed vegetables
2 T chili powder
2 t garlic powder
1 can Ranch Style beans

Combine all the ingredients and simmer for one hour. Serve with crackers, tortillas or cornbread. I like it with cornbread best.
Simple and easy. Really good on a cold or snow day.

What are "ranch style beans?"  This sounds delicious, but I don't know how to look for that ingredient....

Ranch beans are a pinto bean with tomato puree and some other things. Not sure what all.

Hmmm.... :contemplating: I've never heard of it. I'll have to check out the bean aisle at Walmart!  *yes*

And what are "Rotel tomatoes"?

Rotel is just a brand of diced tomatoes.  But you can also get them with diced green chiles for added spice.

*EDIT* I was wrong....Rotel IS tomatoes with chiles. NOT "just" diced tomatoes.

This sounds like a recipe I have called "Santa Fe Chowder".  The ranch beans are available in the canned bean section.  Not everyone carries them.  They are a bit higher in price.  I think you could use chili flavored beans as a substitute if you can't find ranch beans.
