This is sooooo easy.

1 lb. chicken
1 20 oz. jar salsa
1 sweet onion

1. Spread onion ring in bottom of crockpot. Place chicken on onion layer, breast side down. Pour salsa over chicken.

2. Cook on high till no longer pink at bone and juices run clear. A meat thermometer should read 165 deg. They said it would take about 5 hours.

3. Remove from crockpot, cover with foil and rest in warm area 10 minutes before eating.

I didn't use a whole chicken, but used hindquarters. It didn't take nearly as long to cook.

Wow, that is easy! I'll have to try that. Maybe even today - I have chicken thawed out, and I'll be home at lunch so I could put it in the crock pot then.

I do this with a large jar of salsa and four chicken breasts.  Easiest fajita chicken I've ever made!

I do this all the time and use it for all kinds of things!! Salads, chicken tacos/fajitas, casseroles.

I notice that MOST of my recipes for the crock pots do not take as long as they say, so I have to check them earlier or I burn them.

You could use the same recipe with chicken breasts and pull it for pulled chicken. I use this recipe for pulled pork using a pork loin. Yummy

I made this the other night and it was delicious!!!  I used boneless chicken breasts.  They were so tender they fell apart.  I would like to add some black beans and corn next time but my DH wasn't too crazy about that idea.  We had it over brown rice.  This one is a keeper!!
