I am my Beloved's & He is mine.

« on: August 25, 2016, 12:58:32 AM »

When I looked at the ingredients, this looked like a keeper.  I tried it tonight - delish.

1/2 pound uncooked spaghetti, broken in half
1/2 tsp. salt
1/2 boneless, skinless chick breast, cut to bite size (it had breasts on the recipe, but if you only have 1/2???
2 c. chicken stock (it called for Progresso, but I didn't use that brand)
8 oz. cream cheese, cut to 1 inch pieces
7 slices bacon, crisply cooked & crumbled
1/2 c. grated Parmesan cheese
1/2 c. Italian panko crispy bread crumbs
2 Tbl. butter, melted

1. Heat oven to 400 deg. F. Grease 8 in. square baking dish. Spread the spaghetti evenly in dish.
2. Sprinkle salt over chicken. In 12 in. skillet cook it over medium high heat, turning 1 time till browned.  Add stock & cream cheese. Reduce to medium heat & heat to simmering.  break up cream cheese until combined. (I did it till a lot of the cheese was really mixed in.)
3. Pour chicken mix over spaghetti, cover tightly with foil.  Bake 28-30 minutes. Stir.
4. In a bowl mix bacon, Parmesan cheese, bread crumbs & melted butter. Sprinkle over the dish & bake for 8-10 minutes (till cheese is melted & bread crumbs are golden brown.

Cool to eating temp & enjoy.

Is this the recipe your DH put in Facebook last night?  It looked awesome.  Definitely have to try this one - it's on the printer now!  Anything with bacon is a keeper!!!!

Yes it is. He must have been really impressed with it because he rarely takes pics & posts them.

I made this last night and despite the fact that I messed it up a little, it was delicious!  I think I used too much pasta and some of it didn't quite get done and it stuck together.  The next time I'll use a little less (in my mind you can't have too much pasta, but I guess you have to keep the liquid/pasta ratio in the right amounts).  I also forgot to stir everything before I put the topping on and put it back into the oven.  It's definitely a keeper!  Thanks for sharing this one Mary.   oh yeah

Karen, I had trouble with the pasta not getting done so the last time I made it I boiled the spaghetti in more chicken stock. That makes a huge difference & the chicken broth helps the flavor of the spaghetti. This has to be one of my favorite recipes.
