I tried three different batches...and couldn't get them right.  They are mushy and tasteless.  I tried just salt and pepper.  One with salt, pepper, paprika and garlic.  One with light olive oil.  One with more olive oil.  I just can't get them to taste good.

I've been baking them to avoid deep frying, but I'm thinking deep frying might be the only way to make them GOOD.

Has anyone else ever had luck with sweet potato fries?

I just very them in a pan with coconut oil and salt. I also leave them really chummy to retain the texture.

I usually do them in the oven, but they are NEVER as good as in the restaurant.  I find high heat on parchment paper to prevent burning, and flipping them half way through gives me the best results.  And it matters how they are cut, to me.  I've had the crinkle cut and the steak cut, I prefer the steak cut, but if there were shoestring I think they'd be better b/c they'd crisp up faster.
