Heavenly Mint Brownie Dessert (Taste of Home, 2013)

Prep: 30 minutes + chilling, Bake: 20 minutes + cooling   Makes 12 servings

Base:
•   2 oz unsweetened chocolate, chopped
•   ¼ C butter, cubed
•   2 eggs
•   1 C sugar
•   1/8 t salt
•   ½ C plus 2 T all purpose flour
•   12 mint Andes candies, chopped (pkg has 28)
Preheat oven to 350. In microwave, melt unsweetened chocolate and butter, stir until smooth and cool slightly. While cooling, in a large bowl, beat eggs, sugar and salt. Stir in slightly cooled chocolate mixture. Gradually add flour, mixing well.   Fold in mint candies. Spread in a greased 9 in springform pan. Bake 20-25 minutes or until a toothpick inserted in center comes out clean. Cool completely on a wire rack.

Filling:
•   12 oz cream cheese, softened
•   6 T butter, softened
•   1 pkg (10 to 12 oz) white baking chips
•   1T shortening
•   ½ t peppermint extract
•   3 to 4 drops green food coloring, optional
•   12 mint Andes candies, chopped
In a bowl, beat cream cheese & butter until blended. In a microwave, melt white baking chips and shortening, stir until smooth. Cool slightly. Beat into cream cheese mixture. Add extract, and if desired, the food coloring. Fold in mint candies. Spread over cooled brownie layer and refrigerate until firm, about 2 hours.

Ganache topping:
•   9 oz semisweet chocolate, chopped
•   1 C heavy whipping cream
Place chocolate in a small bowl. In a small saucepan, bring cream just to a boil. Pour over the chocolate, stirring with a whisk until smooth. Cool slightly, then spread ganache over cooled filling. Refrigerate at least 30 minutes, until set. Remove rim from pan. Alternatively, you can remove rim first, then pour ganache over, allowing the glaze to drip down the sides.

Per 1/12 slice serving, 669 calories,  49 gram fat (30g saturated), 122 mg chol, 221 mg sodium, 56 g carb, 3g fiber, 8 g protein.

Not great for diets, but a showstopper dessert and not that hard to make. You can speed it up by using a brownie mix for the base. Be sure to cut it with a sharp knife, dipping it in hot water between each cut.

I have made a brownie dessert very, very similar to this. It is wonderful!

This sounds like I'm gonna make it for the next church dinner. 
By the way, does anyone every substitute something else for the cream cheese?  My husband HATES cream cheese and can taste it and smell it from a mile away, so I am wondering if there is something else I could use to make things like this so he will eat them too, and I won't get so fat by myself.
