We saw this made on Diners, Drive-Ins, & Dives and modified it to our taste.

1 Spaghetti squash
1 onion, diced
1 zucchini, diced
1 yellow squash, diced
1/2 container of fresh mushrooms (optional - I hate them but you can add if you like them)
1 bag frozen broccoli
1 bag frozen green beans
1 bag frozen peas & carrots
1 jar marinara sauce (Newman's Own is amazing but expensive)
Mozzarella cheese, either sliced or shredded - either will work

Cut the spaghetti squash in half and place in large pot of boiling water. Cook on medium boil for 10-15 minutes. Squash will be tender. In the mean time, place all other veggies in a skillet with margarine or olive oil. Cook until almost tender. When spaghetti squash is done, scoop out seeds and scrape squash with a fork. Place strands of squash in pan with other veggies and add marinara sauce. Stir and add seasonings to taste. Place veggie mixture in a dish and top with mozzarella cheese and bake at 350 for 20-30 minutes.

This is an awesome dish and makes a lot. We ate on this for 2 days and gave some to my mom.
