3 eggs
2 c. sugar
1 c. vegetable oil (I used this today, but will try half oil & half applesauce next time)
1/3 c. Unsweetened Cocoa Powder
1 1/2 tsp. vanilla
2 c. zucchini, grated
3 c. flour
1 tsp. baking soda
1/2 tsp. baking powsder
1 tsp salt
1/4 tsp. cinnamon
1/4 tsp. nutmeg
1/4 tsp. cloves
1/4 tsp. cardamom

Preheat oven to 350 deg. F/175 deg. c.  Lightly grease or line 2-12 cup muffin tins with paper liners.  In LARGE bowl beat the eggs.  Beat in the sugar & oil.  Add cocoa, vanilla, zucchini & stir well.  Stir in flour & rest of ingredients.  Mix until just moist.  Pour batter into tins, filling 2/3 full.  Bake for 20-25 min.  Remove from pan & let cool on wire rack.  Store loosely covered.

Amt. per serving calories:  217 / total fat: 10.1 g / cholesterol: 26 mg. / total carbs 29.7 g. / protein:  2.7 g.
