A friend gave me this recipe last week.  I made it over the weekend and it is DELICOUS!  Easy to make too.  You can do it on the stove or in the crock pot.  I put it together about 7pm in the crock and cooked it on low over night.  It doesn't really need to "cook" just cook together to meld the flavors.

1 small roaster chicken (already roasted in the deli)...unless you feel like roasting your own...
1 can corn  (UNdrained)
1 can black beans
1 can chili beans
1 can diced tomatoes with onions and green peppers (next time I am replacing this with a jar of salsa)
32oz chicken broth
1 pkg cry taco season
1 pkg dry ranch dressing mix

Pick the meat off the chicken and dump all the ingredients into your pot.  Maybe save the dry stuff until the rest is heated through.  I just dumped it all in the crock and let it go.

Top it with whatever you like.  I like cheese, sour cream, fritos or crusty bread!
